This recipe was born out of a tendency toward big ideas but neither the time nor the inclination to implement them in a big way. Fish tacos was the idea. And on this particular night, with it’s cold rain and drama-filled family shopping excursion, it was a pretty big idea.
Thankfully simplicity rules when it comes to food.
The fish tacos were delicious topped with this simple slaw and guacamole. It was like color therapy sitting down to the table. Everyone lit up. And chowed down.
It is quite a joy watching your kids eat food from the earth that is an otherworldly vibrant purple.

QUICK RED CABBAGE SLAW
serves 6-8 as a side
1/4 head cabbage, shredded (use a very sharp cheese grater or the food processor)
4T olive oil
4T vinegar (i used raw apple cider vinegar, but balsamic would work well too)
salt & pepper, to taste
Toss the ingredients together. Adjust the olive oil & vinegar, salt & pepper to your liking. Great the next couple of days as well!
