I’m sure you know that I’m not so on top of things that I’ve already decorated for Christmas – this photo is from last year (or maybe 2 years ago? hmm). I’m actually slowing down in all areas of my life during the month of December. Except for walking. I need to speed up in that department.
I’ve noticed that these meal plans have become quite popular and I’m so happy that many of you find them helpful! I also love to hear what people are eating to get fresh ideas or reminders of what I can make. The day-in-and-day-outedness of cooking for a family demands frequent inspiration, that is for sure!
You may have noticed that I haven’t posted our meal plans in the last few weeks. One of the reasons is that I’ve been wanting to focus my energies on writing up some recipes up to link to in my meal plans. I feel a little guilty having mentioned enchilada lasagna several times already without having given you the recipe.
But this is going to take some time, so I’ll still post our weekly meal plan occasionally so that you can keep getting new ideas.

This Week’s Meal Plan
Lucas’s lunch this week is going to be hummus, pita triangles, cucumbers, carrots, olives and fruit. Sofia and I usually eat simple lunches like canned fish, or avocado & cheese chunks, 5-minute guacamole, salad, etc.
Dinner: beef chili over quinoa, arugula salad
Breakfast: date sweetened cocoa-cherry coconut milkshakes (similar to this one)
Dinner: leftover chili
Breakfast: broccoli-cheese frittata
Dinner: roasted potatoes, shrimp with cocktail sauce
Breakfast: pumpkin pie french toast
Dinner: taco bowls using cauliflower rice
Breakfast: oatmeal with berries
Dinner: pasta with veggies (red pepper, carrot) pureed into tomato sauce, salad
Dinner: enchilada lasagna
