I’ve been wanting to try baking potatoes in the crock pot for a while now and finally got around to it a couple of nights ago with some sweet potatoes. No aluminum required!
I lined the bottom with some foil just in case but they didn’t get as ooey gooey as they do in the oven so next time I’m throwing them straight in.
The skin was dry, but once I peeled them, they were very moist. And so much less fuss.
Here’s how I did it.
Baked Sweet Potatoes in the Crock Pot
1. Scrub sweet potatoes (any number that will comfortably fit).
2. Without drying them off, place them in the crock pot.
3. Bake 4-6 hours on low. I ended up cooking them overnight (or ~ 8) hours and they were fine.
I have heard, but not yet tried, that to make regular potatoes you bake for 6-8 hours on low.
This would be great for holiday cooking or for setting up a baked potato bar at a football party. I baked my sweet potatoes overnight so that in the morning, I could make a couple of sweet potato pies (one of our favorite desserts!) We like them chilled straight out of the fridge.
NOTE! Cooking times vary widely with crockpots, so if yours runs hot, check them sooner.
